Slice peppers in half lengthways and remove the seeds
Combine cream cheese, grated cheddar and oregano. Spoon it into the pepper halves. Don't overfill.
Put the halves back together and tightly wrap each one with a bacon rasher.
Place on a baking tray and bake for 20 minutes. Grill under a hot grill for a further 10 minutes or until bacon is good and crispy.
I'm looking forward to developing this recipe. Current ideas include adding a little garlic to the cheese mix and trying some different cheeses. I wonder if brie would work in place of the cream cheese?
